Maison Provence (formerly Pates et Traditions) was opened in 2009 by Laurent Dantonio when he arrived from Nice, France with his family. Laurent cooked authentic recipes from his childhood and quickly the restaurant became a hot spot for New Yorkers in search of traditional French food. We quickly became one of the top 3 French restaurants in Brooklyn and continued to top the ranking until our closing, at which point we were one of the oldest restaurants in Williamsburg.

Laurent Dantonio
Founder & Chef
Laurent Dantonio has 15 years of experience in the restaurant business and food operations. He was the founder, chef and operating owner of various hospitality businesses: "Pates Et Traditions" restaurant , "Santos Anne" restaurant, "Club Bonafide jazz", and "Sandwicherie 52" gourmet food cart. Born in Nice, France into a culinary and musical family, he's a passionate and creative food lover. In 2009, Laurent fulfilled his dream to live in New York and share his background and his recipes with his fellow New Yorkers. His hospitality and culinary talents have been recognized by leading entrepreneurs and artists. Chef Laurent graduated cum laude in 1992 from the hospitality school of Menton, France.
