The bakery has a unique "Hub & Spoke" model, where its commissary kitchen in Irvine creates doughs, fillings, and retail pastries/confections, which get delivered to its 3 retail bakeries. At these locations, our bakers and pastry chefs create all breads, cakes, tarts, breakfast pastries, etc in house. This allows the bakery to have smaller kitchen footprints at its retail locations.
