Company Description
Chaia is an unconventional taco shop serving insanely delicious food made almost entirely with vegetables. Chaia means life, and Chaia’s life began at a farmers’ market in May of 2013.
Key Deal Facts
In 2015, Chaia opened its first brick and mortar store in Georgetown and in 2019 opened a second shop in Downtown DC.
In September 2021, they will open their third location in Bethesda, Maryland.
Chaia uses only the freshest, local (and - whenever possible - organic) vegetables.
The menu is short and sweet, offering 6 vegetable taco creations at a time, a few outrageously delicious sides, a soup for when it’s cold, and drinks on tap — from kombucha to beer, tea, and rosé.

Bettina Stern, Co-founder
Bettina Stern is on a mission to get people to eat more vegetables. Bettina co-founded Chaia, an unconventional plant-powered taco restaurant based in Washington, DC, as a way to inspire long-term shifts in how people eat for the benefit of not only their health, but also the health of the environment. Bettina is a graduate of Middlebury College with a dual degree in American Studies/American Literature and Italian.
Suzanne Simon, Co-founder
Suzanne Simon co-founded Chaia with Bettina Stern after identifying a niche market for plant-based, seasonal and urban street-style food. Simon has her B.S. in Environmental Science from Ohio University and a certificate in Plant-Based Nutrition from Cornell University. She previously worked as an editor for John Wiley & Sons and as an environmental consultant. She is a recipient of the James Beard Foundation’s Women’s Entrepreneurial Leadership program fellowship award, developed and hosted by Babson College.
